Fruit Patch Gets Fruit Cold Fast
As soon as it is picked the Fruit Patch fruit is transported to the packing facility where the fruit is immediately cooled to 32 degrees Fahrenheit. This is critical for halting the ripening process and helping to suppress pathogens. Fruit selected for the preconditioning process is cooled only into the fifties to facilitate the necessary ripening after packing at 68 degrees.
