Fruit Maturity, Ripening And Quality Relationships

Maturity at harvest is the most important factor contributing to storage-life and final fruit quality. Immature fruits are more subject to shriveling and mechanical damage, and are of inferior flavor when ripe. Over ripe fruits are susceptible to bruising, which correlates to decay. Fruits picked either too early or too late in their season are more susceptible to post harvest physiological disorders than fruits picked at the proper maturity.
